Jackfruit Stir Fry

2 tbsp olive oil

½ cup vegetable stock

¼ cup chopped onion

1 clove garlic diced

1 cup chopped kale

1 pkg Upton’s Naturals Jackfruit

1 cup steamed rice

Cooking directions

  1. Add olive oil to frying pan, medium heat
  2. Add onion, garlic and kale, sauté until onions are translucent
  3. Add vegetable stock, cover and simmer approx. 10 mins or until kale is tender
  4. Add Upton’s Naturals Jackfruit, cover and simmer for 5 minutes
  5. Serve over rice
